Bread Slices - 6 (Each Bread Slice cut into 3 equal elongated pieces - Refer the picture above)
For Topping -
Oil - 1 tbsp
Jeera - ½ tsp
Ginger, Garlic & Green Chilly Paste - 1 tsp
Finely Chopped Onion - 1 medium size
Par boiled Green Peas - ¼ cup
Par boiled finely chopped Carrot - ¼ cup
Par boiled finely chopped French Beans - ¼ cup
Salt - As per taste
Red Chilly Powder - 1 tsp
White Pepper Powder - ½ tsp (if you are using Black Pepper Powder then use less than ½ tsp because it is spicier)
Roasted Jeera Powder - ½ tsp
Sugar - 1 pinch
Grated Paneer - 2 to 3 tbsp (optional)
Mashed Boiled Potatoes - 3 medium size
Bread Crumbs - 3 to 4 tbsp
Corn Flour - 2 tbsp
For Slurry -
Corn Flour - 3 tbsp
Rice Flour/Maida - 2 tbsp
Water - 3 to 4 tbsp
How to make?
Firstly, for Topping, heat Oil in a pan. Add Ginger, Garlic & Green Chilly Paste & Jeera & let it crackle.
Now, add finely chopped Onions & let it saute for a minute on medium flame.
Now, add par boiled Green Peas & let it saute for a minute on medium flame.
Now, add par boiled finely chopped Carrots & let it saute for a minute on medium flame.
Now, add par boiled finely chopped French Beans & again let it saute for a minute on medium flame.
Now, add Salt, Red Chilly Powder, White Pepper Powder/Black Pepper Powder & mix it properly.
Now, add grated Paneer & mix well.
Now, add par boiled mashed Potatoes & mix till the mixture becomes smooth.
Now, turn off the flame & transfer the Topping mixture into a bowl. Let it cool a little, then add Bread Crumbs & Corn Flour & mix well.
Now, prepare Slurry by mixing Slurry ingredients mentioned above.
Now, heat Oil in a pan on low to medium flame for deep frying/shallow frying.
Now, take 1 piece of Bread & place the Topping mixture prepared above over it & press it a little using your hands so that the Topping mixture gets stuck onto the Bread piece. Similarly, prepare all other Veg Fingers.
Now, pour above prepared Slurry over each Veg Finger using a spoon so that the Topping sticks properly to the Bread pieces & does not separate while deep frying/shallow frying.
Now, deep fry/shallow fry all the Veg Fingers on low to medium flame till they turn golden brown & crispy from both the sides.
Finally, your Crunchy Veg Fingers are ready to be served hot.
