Swirled Mathri
This is a very delicious tea-time snack. This is a very colourful & vibrant snack which also makes a perfect homemade gift for some special occasions.
What you'll need:- Oil for Frying
For Dough -- Refined Flour (Maida) - 2 cups
- Wheat Flour - ½ cup
- Gram Flour (Besan) - ½ cup
- Semolina (Suji) - ¼ cup
- Carrom Seeds (Ajwain) - ½ tsp
- Cumin Seeds (Jeera) - ½ tsp
- Coarsely crushed Black Pepper - 1 tsp
- Coarsely crushed Dry Coriander Seeds - 1 tsp
- Asafoetida - 2 pinch
- Salt - As per taste
- Oil/Ghee - ½ cup
- Water - As per requirement
For Green Coloured Dough - - Spinach (Palak) - 2 tbsp
- Fenugreek Leaves (Methi Leaves) - 2 tbsp
- Coriander Leaves - 2 tbsp
- Mint Leaves (Pudina) - 2 tbsp
- Water - 1 tsp
- Refined Flour (Maida) - 2 tbsp
For Orange Coloured Dough -- Tomato - 1
- Refined Flour (Maida) - 2 tbsp
How to make?- Firstly, prepare a dough by mixing Refined Flour (Maida), Wheat Flour, Gram Flour (Besan) & Semolina (Suji) properly.
- Now, add Oil/Ghee, Carrom Seeds, Cumin Seeds, coarsely crushed Coriander Seeds, coarsely crushed Black Pepper, Asafoetida & Salt & mix it well.
- Now, add Water little by little & knead it into a hard dough. Let the Dough rest for 10 to 15 minutes.
- Now, divide the Dough in three equal portions.
- Now, for Green Coloured Dough, firstly, take a mixer jar & grind Spinach (Palak), Fenugreek Leaves, Coriander Leaves & Mint Leaves with very little 1 tsp of water to form a smooth green paste.
- Now, take 1 portion of Dough & add above prepared Green Paste & 2 tbsp of Refined Flour (Maida) & mix everything well to form a Green coloured Dough & keep it aside.
- Now, for Orange Coloured Dough, make Tomato Puree by grinding in mixer. Now, take another portion of Dough & add this Tomato Puree & 2 tbsp of Refines Flour (Maida) & mix everything well to form a Orange coloured Dough & keep it aside.
- Meanwhile, let the Oil heat in a pan on medium flame.
- Now, take Orange coloured Dough, make Roti of ¼th inch thickness, with the help of Rolling Pin & Board (Chakla & Belan). Similarly prepare Rotis from Green Coloured Dough & Normal Dough.
- Now, take Rolling Pin & Board (Chakla & Belan) combine all the three Rotis by placing one above the other & flatten it a little gently by using Rolling Pin, so that all the three Rotis bind together.
- Now, make a roll from this combined Roti & cut 1 inch thick slices out of it. Take a 1 inch slice & flatten it with the help of Rolling Pin & Board (Chakla & Belan) to give it the shape of a small puri or flatten it by pressing between your palms. Similarly, make small puris out of remaining 1 inch slices.
- Now, deep fry these Swirled Mathris on medium flame till it turns crispy & golden brown.
- Finally, your Swirled Mathri is ready to be eaten or gifted to someone special.
