Kalakand (Diwali Special)

 

Kalakand

What you'll need:

  1. Full Cream Milk - 750 ml
  2. Chenna/Paneer - Made from 1.25 litres of Full Cream Milk
  3. Sugar - Less than ½ cup or as per taste

 For Chenna - 

  1. Full Cream Milk - 1.25 litres
  2. White Vinegar - 3 to 4 tbsp
  3. Water - 3 to 4 tbsp

 For Garnishing - 

  1. Mixed Dry Fruits (Chopped)

How to make?

  • Firstly, boil 750 ml Full Cream Milk in a thick bottom pan on low to medium flame.
  • Now, prepare Chenna by boiling  1.25 ml of Full Cream Milk as mentioned for Chenna. When Milk starts to boil, turn off the flame.
  • Till the Milk boils, mix White Vinegar & Water in a bowl.
  • Now, add White Vinegar & Water mixture to the boiled Milk slowly, 1.5 tbsp at a time & mix slightly with a spoon.
  • similarly, mix the entire White Vinegar & Water mixture in boiled Milk & stir till the curdles.
  • Now, strain this curdled Milk in a cotton cloth. Drain the water properly.
  • Now, wash the Chenna prepared above, using cold water so that effect of Vinegar goes away.
  • Now, drain the excess water by squeezing the cotton cloth lightly. Do not over squeeze it. Let some moisture remain.
  • Now, take out Chenna in a plate & rub it well using hands till it's texture becomes smooth. It will take 5 minutes to become smooth.
  • Now,  your Chenna is ready to be used.
  • Now, check whether the 750 ml Full Cream Milk which we kept for boiling has reduced to half or not. After it reduces to half, add Sugar slowly slowly in the above in it. Stir continuously & cook the Milk & Sugar mixture till it becomes thick or reduced to one third.
  • Now, add above prepared Chenna to this  reduced Milk & Sugar mixture, mix it well & let it cook for 5 minutes on high flame stirring continuously or till mixture thickens or till you achieve proper consistency.
  • Now, transfer the mixture into a greased tray & garnish it with chopped Dry Fruits & let it set for 6 to 7 hours at room temperature.
  • Then, cut the Kalakand into the desired shape of your choice or as shown in the picture.
  • Finally, your Diwali Special Kalakand is ready to be served or gifted.
