Moti Modak (Ganpati Special)

 

Moti Modak

This is best described as a surprise Modak because it includes a sweet surprise inside it in the form of Moti (Pearls). When you'll have this Modak, you'll feel the Motis melting into your mouth. This is a different yet a tasty type of Modak.

What you'll need:

 For Outer Layer - 

  1. Desiccated Coconut - ¾ cup

  3. Condensed Milk - 2 tbsp (For my Homemade Condensed Milk in 3 minutes recipe, click here - https://tastytreatsbyvarsha.blogspot.com/2020/10/homemade-condensed-milk-in-3-minutes.html )

 For Boondi - 

  1. Gram Flour (Besan) - 1 cup
  2. Water - As per requirement
  3. Orange Food Colour - 2 to 3 drops
  4. Baking Soda - A pinch
  5. Oil for frying

For Moti (Stuffing) - 

  1. Orange coloured Boondi - Refer the recipe below (Tip: You can also use store bought 75 grams Orange coloured sweet Boondi)
  2. Sugar Syrup - ¼ cup Sugar & 4 to 5 tbsp Water
  3. Orange Emulsion - 2 to 3 drops (Tip: If this is not available, you can use 2 to 3 drops of Orange Food Colour & 2 to 3 drops of Rose Essence)
(Tip: If you are using store bought sweet Boondi, you don't need Sugar Syrup & Orange Emulsion)

How to make?

 For Boondi - 

  • Firstly, take Oil in a pan & let it heat on low to medium flame.
  • Till the Oil heats up, prepare the batter mixing Gram Flour (Besan), Water, Orange Food Colour & Baking Soda.
  • Now, hold either a Grater or Boondi Jhara or a sieve with a big hole 10-12 inches above the oil pan.
  • Now, slowly pour the batter prepared above onto the Grater or Boondi Jhara or a sieve with a big hole so that the Boondi directly falls into the Oil through the Grater or Boondi Jhara or a sieve with a big hole.
  • Now, deep fry the Boondis till it becomes crispy & hard. Keep it aside.

 For Moti - 

  • Firstly, prepare one thread Sugar Syrup with the help of Sugar & Water as mentioned above on low flame.
  • Mix the Boondis with the Sugar Syrup & let it cook on low flame.
  • Now, add Orange Emulsion, mix well & cook well till bubbles stop coming out or till the bubbles are reduced.
  • Keep it aside to cool down.

 For Modak - 

  • Firstly, prepare the Outer Layer by mixing Desiccated Coconut, Sweet Mawa & Condensed Milk.
  • Now, divide the Outer Layer prepared above in equal portions. Also divide the Moti in equal portions.
  • Now, take a Modak mould & grease it a little with Oil.
  • Now, spread the outer layer mixture on the walls of the Modak mould.
  • Now, close the Modak mould, add Moti stuffing in between & seal it with outer layer mixture carefully so that the Moti stuffing doesn't come out.
  • Now, carefully open the Modak mould & take out the Modak prepared. Similarly, prepare all other Modaks.
  • Finally, your Modaks are ready to be offered to Lord Ganesha on the occasion of Ganesh Chaturhti.

NOTE: For a simpler recipe, 
  • You can use store bought Orange Coloured Sweet Boondi for stuffing. 
  • For outer layer, just boil ¼ cup Milk, add 3 tbsp Sugar & boil it till the Sugar melts. Now, in a pan, take 1 cup Desiccated Coconut, add 3 tbsp Sugar & cook for 2 minutes on low flame. Then, add the above prepared Sugar-Milk mixture in it & cook till the mixture dries a little. Finally, add 2 tsp of Ghee/Malai. Then, take it out in a bowl & let it cool. Your outer layer is ready. 
  • Use this stuffing & outer layer to prepare your Modaks. 


*Makes 12-15 pieces of normal size

Shelf Life - 8 to 10 days at room temperature
