Bhindi Kurkure

If I just had 3 words to describe this recipe, it would be - spicy, tasty & crispy. It can be served as an evening snack with tea or as a side dish. It's gluten free & vegan. It can be served with Dal-Rice, Sambhar-Rice, Curd Rice & even with plain simple Chapatis/Parathas or you can just simply have it with Bread slices. The best part about this recipe is that you can store it upto 1 month & this is the best recipe for the times when you are travelling.

What you'll need:

  1. Okra/Ladies Finger (Bhindi) - 200 grams (small size)
  2. Salt - As per taste
  3. Rock Salt/Black Salt - ½ tsp
  4. Jeera Powder - ½ tsp
  5. Black Pepper - ½ tsp
  6. Chaat Masala - ½ tsp
  7. Kashmiri Red Chilly Powder - ½ tsp
  8. Garam Masala - ½ tsp
  9. Gram Flour (Besan) - 2 tbsp
  10. Corn Flour - 2 tbsp
  11. Water - As needed
  12. Oil for Frying

How to make?

  • Firstly, cut the ends of all the Okras (Bhindis).
  • Then, cut each Okra (Bhindi) vertically in 4 thin strips (Tip: Preferably use small Bhindis. If you use longer ones, you'll have to deseed it before making this recipe).
  • Now, take a bowl & mix all the Masalas mentioned above from 2 to 8 i.e. from Salt to Garam Masala.
  • Now, coat all the Okras (Bhindis) with this Masala. Coat properly so that each & every Okra (Bhindi) strip is covered in Masala.
  • Now, put half Gram Flour (Besan) & half Corn Flour on these coated Okras (Bhindis) & mix well using your hands.
  • Now, wet your palm with little Water & mix all the Okras (Bhindis) with your wet palm to coat all the Okras (Bhindis) properly (Tip: Don't use too much Water. Very little Water is needed for the Masala to be coated over Bhindis).
  • Again, put remaining Gram Flour (Besan) & remaining Corn Flour on the Okras (Bhindis) & mix well with your hands.
  • One again, wet your palm with little Water & mix all the Okras (Bhindis) using your wet palm so that all Okras (Bhindis) are coated well.
  • Now, heat oil in a pan.
  • Then, fry the Okras (Bhindis) in 2-3 portions on medium flame.
  • Finally, your kurkure & crispy Bhindi is ready to be served.
Tip: If you want your Okras (Bhindis) to be more spicy, you can sprinkle a mixture of Chaat Masala & Black Salt over your Okras (Bhindis) after frying.
