Pani Puri Kachori

This is a fusion recipe. Fusion of Pani Puri + Kachori. They both taste good on their own but even better together. When you are confused between having Pani Puri or Kachori, why not go for a Pani Puri + Kachori fusion, that is Pani Puri Kachori.

What you'll need:

  1. Oil for frying

 For Outer Layer - 

  1. Boiled Potatoes - 3
  2. Semolina (Suji/Rawa) Batter - Refer below
  3. Salt - As per taste
  4. Chilly Flakes - As per taste
  5. Bread Crumbs - 2 to 3 tbsp

 For Semolina (Suji/Rawa) Batter - 

  1. Semolina (Suji/Rawa) - 1 cup
  2. Water - 2½ cups
  3. Salt - 1 tsp
  4. Chilly Flakes - 1 tsp

 For Stuffing (Green Layer) - 

  1. Bengal Gram (Dalia) - 1 cup
  2. Mint Leaves (Pudina) - ½ cup
  3. Coriander Leaves - ½ cup
  4. Green Chillies - As per taste
  5. Lemon Juice - 1 to 2 tbsp
  6. Pani Puri Masala - 1 tsp
  7. Black Salt - ½ tsp or as per taste
  8. Corn Flour Slurry - Refer below

 For Corn Flour Slurry - 

  1. Corn Flour - 2 tbsp
  2. Water - 4 to 5 tbsp

 For Coating - 

  1. Bread Crumbs - 4 to 5 tbsp

How to make?

  • Firstly, prepare Semolina (Suji/Rawa) Batter by boiling Water in a pan. When Water starts to boil, add Salt, Chilly Flakes & Semolina (Suji/Rawa). Let it cook on low flame for 2-3 minutes or till the mixture is dry or till it leaves the sides of the pan.
  • Now, transfer this mixture in a bowl & let it cool.
  • Now, for preparing Stuffing (Green Layer), take a grinding jar & grind Bengal Gram (Dalia).
  • Now, add Mint Leaves, Coriander Leaves, Green Chillies, Lemon Juice in the grinding jar & churn (Do not add Water because we need the mixture for the Stuffing to be dry).
  • Now, take out all this in a bowl & add Pani Puri Masala & Black Salt & mix well.
  • Now, divide this Stuffing (Green Layer) mixture prepared above into equal portions & make small balls out of it.
  • Now, prepare Outer Layer by mixing Boiled Potatoes, Semolina (Suji/Rawa) Batter, Salt, Chilly Flakes & Bread Crumbs.
  • Now, take a small portion of Outer Layer mixture prepared above & make a palm sized flat round (like a small Puri) out of it, put the Stuffing (Green Layer) ball in between & cover it by giving a round shape like a ball (Refer picture above). Similarly, prepare all other balls.
  • Meanwhile, let the Oil heat in a pan.
  • Now, prepare Corn Flour Slurry by mixing the Slurry ingredients mentioned above using your hands.
  • Now, dip all the balls in the Slurry prepared above one by one.
  • Now, coat each ball with Bread Crumbs.
  • Then, fry all the balls on medium flame.
  • Finally, your crispy Pani Puri Kachori is ready to be served with Green Chutney or any dip of your choice.
