Stuffed Capsicum

What you'll need:

  1. Medium Green Capsicums - 4 
  2. Ginger-Garlic-Green Chilly Paste - 1 tsp 
  3. Finely chopped medium Onion - 1 
  4. Peeled & Finely chopped medium Carrot - 1
  5. Boiled Green Peas - 2 tbsp
  6. Boiled Corn - 2 tbsp
  7. Boiled, peeled & grated medium Potato - 1
  8. Oil - 2 tbsp + as required 
  9. Salt- As per taste 
  10. Chaat Masala - ½ tsp
  11. Ambchur Powder (Dry Mango Powder) - ½ tsp
  12. Red Chilly Powder - 1 tsp
  13. Turmeric Powder (Haldi Powder) - ¼ tsp
  14. Dry Coriander Powder - 1 tsp
  15. Everest Kitchen King Masala - ½ tsp

How to make?

  • Firstly, halve each Capsicum vertically & deseed. 
  • Then, mix 1 tbsp Oil & some Salt in a bowl & apply the mixture on the inside & outside of Capsicum halves.
  • Then, saute above Capsicums in a pan for 2-3 minutes on low to medium flame. Keep these Capsicums aside.
  • To prepare stuffing, heat 1 tbsp Oil in a non-stick pan, add Garlic-Ginger-Green Chilly Paste and saute for 30 seconds. 
  • Then, add ingredients from 3-7 serially in the pan & saute it for 2-3 minutes on low to medium flame. 
  • Now, add ingredients from 9-15 serially, mix well & cook for 1 minute. Then, transfer the stuffing in a bowl.
  • Then, fill the prepared capsicum halves with the stuffing.
  • Then, take a pan, put some Oil on it & cook the above stuffed Capsicums for 2-3 minutes on medium to high flame. 
  • Now, lower the flame & cover the pan with a lid & cook till Capsicums become tender. (Tip: If you want top portion of your stuffed Capsicums crispier, apply Corn Flour Slurry on all the stuffed Capsicums properly. Then, flip the Capsicums & let them cook from another side till crispier)
  • Finally, your Stuffed Capsicum is ready to be served hot.
