Lemon 'n' Chilly Pickle (Sindhi Special)
What you'll need:- Lemon - 10 (medium size)
- Big sized pickle Green Chillies - 100 gms
- Salt - 2 tsp
- Lemon Juice - Of 6 Lemons
How to make?- Firstly, slit the Lemons half way giving it two cross cuts as shown in the picture. Ensure that the bottom portion of the Lemons remain intact.
- Now, take 1 tsp Salt & rub it over all the Lemons & let it rest for 1 hour.
- Now, slit all the Green Chillies vertically as shown in the picture. Ensure that the bottom portion of the Chillies remain intact.
- Now, take remaining 1 tsp Salt & rub it over all the Green Chillies & let it rest.
- Now, pour the Lemon Juice into an air tight, sterilised jar/container.
- Then, add all the salted Lemons & Green Chillies in the jar/container. Close the jar/container tightly & shake the jar/container well.
- Now, let this jar/container rest under sunlight for a day. Shake the jar/container occasionally.
- After a day, store it at room temperature for more 5-6 days or till the Lemons & Chillies are tender. Shake the jar/container occasionally 2-3 times a day.
- Finally, your Pickle is ready to be consumed.
Tip 1: If the weather is not sunny, your pickle will take more 3-4 days to get ready/turn tender.
Tip 2: Once your pickle is ready i.e. Lemons & Chillies are tender, you can store this pickle in the fridge for a longer period of 2-3 years.
