Lemon Cupcakes (Christmas Special)
What you'll need:- Curd - 2 tbsp
- Oil - 2 tbsp
- Milk - 2 tbsp
- Lemon Juice - 1 tbsp
- Maida - ½ cup
- Powdered Sugar - 4 tbsp
- Salt - A pinch
- Baking Powder - ¼ tsp
- Baking Soda - ¼ tsp
- Lemon Essence - ½ tsp (Optional)
- Vanilla Essence - ½ tsp
- Lemon Zest - ¼ tsp (It is the grated outer yellow part of the skin of Lemon)
For Icing - - Cold Butter - 4 tbsp
- Icing Sugar - 4 tbsp
- Milk - 1 tbsp
For Garnishing - - Mint Sprig/Lemon Zest/Silver Balls - As per choice
How to make? - Firstly, in a bowl, mix all the above mentioned ingredients & prepare lump-free Cupcake batter of pouring consistency (You can either use whisker or a hand beater to mix).
- Now, pour the batter in the greased Cupcake moulds.
- Then, bake it in a pre-heated oven at
180°C for 10-15 minutes. - Meanwhile, prepare the icing in a cold bowl. For that, mix the above mentioned icing ingredients till the mixture turns light & fluffy. (Tip: To check whether your icing is ready or not, take the icing mixture in a spoon & try to pour it down, if it doesn't fall, your icing is ready. If it falls, you need to mix more)
- Now, keep your icing in the fridge to set. (Tip: You can store this Icing for 7 days in fridge)
- Now, after 10-12 minutes, take a toothpick & insert it into your Cupcake & check whether it comes out clean. If it does, your Cupcakes are ready, else let it bake for few more minutes.
- Now, after your Cupcakes are ready, let them cool & after that decorate it with Icing. (Refer the picture)
- Now, garnish your Cupcakes with Lemon Zest/Mint Sprig/Silver Balls.
- Finally, your Lemon Cupcakes are ready to be served.
