Lemon Cupcakes (Christmas Special)

What you'll need:

  1. Curd - 2 tbsp
  2. Oil - 2 tbsp
  3. Milk - 2 tbsp
  4. Lemon Juice - 1 tbsp
  5. Maida - ½ cup
  6. Powdered Sugar - 4 tbsp
  7. Salt - A pinch
  8. Baking Powder - ¼ tsp
  9. Baking Soda - ¼ tsp
  10. Lemon Essence - ½ tsp (Optional)
  11. Vanilla Essence - ½ tsp
  12. Lemon Zest - ¼ tsp (It is the grated outer yellow part of the skin of Lemon)

 For Icing - 

  1. Cold Butter - 4 tbsp
  2. Icing Sugar - 4 tbsp
  3. Milk - 1 tbsp

 For Garnishing - 

  1. Mint Sprig/Lemon Zest/Silver Balls - As per choice

How to make?

  • Firstly, in a bowl, mix all the above mentioned ingredients & prepare lump-free Cupcake batter of pouring consistency (You can either use whisker or a hand beater to mix).
  • Now, pour the batter in the greased Cupcake moulds.
  • Then, bake it in a pre-heated oven at 
    180°C for 10-15 minutes.
  • Meanwhile, prepare the icing in a cold bowl. For that, mix the above mentioned icing ingredients till the mixture turns light & fluffy. (Tip: To check whether your icing is ready or not, take the icing mixture in a spoon & try to pour it down, if it doesn't fall, your icing is ready. If it falls, you need to mix more)
  • Now, keep your icing in the fridge to set. (Tip: You can store this Icing for 7 days in fridge)
  • Now, after 10-12 minutes, take a toothpick & insert it into your Cupcake & check whether it comes out clean. If it does, your Cupcakes are ready, else let it bake for few more minutes.
  • Now, after your Cupcakes are ready, let them cool & after that decorate it with Icing. (Refer the picture)
  • Now, garnish your Cupcakes with Lemon Zest/Mint Sprig/Silver Balls.
  • Finally, your Lemon Cupcakes are ready to be served.
*Makes 5 Cupcakes of medium size
