Rainbow Cookies
What you'll need:- All Purpose Flour - 1+¼ cup (150 grams)
- Butter - ½ cup-1 tbsp (100 grams) (Tip: You can use normal size Amul Butter pack. It is exactly 100 grams)
- Powdered Sugar - ½ cup (60 grams)
- Cornflour - 2 tbsp
- Baking Powder - ½ tsp
- Vanilla Essence - ½ tsp
- Food Colours (Purple, Blue, Green, Yellow, Orange & Red) - 1 to 2 drops each (Tip: You can make Purple Food Colour by mixing Red & Blue Food Colour)
How to make?- Firstly, in a bowl, take Butter & Sugar mix well till the mixture becomes light and fluffy.
- Now, add sifted All Purpose Flour, Corn Flour, Baking Powder & Vanilla Essence.
- Now, make a dough using hands gently. (Tip: If your dough becomes too hard then just put 1 tsp of milk to make it proper)
- Now, take a steamer or a pan, put 1 cup salt in it & then place a wired rack/inverted bowl at the centre of the steamer/pan & preheat it on medium flame for 10 minutes.
- Meanwhile, divide the dough into 6 portions of equal size & add 6 Food Colours to 6 dough portions respectively. By doing this, you will get 6 different coloured dough.
- Now, take a Rolling Pin & Board (Chakla-Belan), place a plastic sheet on it, keep red coloured dough on the plastic sheet & cover it with another plastic sheet. Now, flatten this red dough into a elongated rectangular shape of medium thickness using Rolling Pin. Similarly, flatten all other colourful doughs.
- Now, place all the doughs one above the other on the plastic sheet as shown in the picture. (First place Red dough, then Orange dough, then Yellow dough, then Green dough, then Blue dough & finally the Purple dough). Now, cover the rectangular Rainbow block of doughs with another plastic sheet & flatten it a little gently using Rolling Pin so that all the colours stick/bind together.
- Now, cut rectangular pieces out of this Rainbow block of doughs of ½ inch thickness. (Refer the video below)
- Now, line a tray/plate with Parchment Paper/Butter Paper & place all the rectangular shaped Rainbow Cookies on it, leaving some gap between each cookie (because each cookie will rise a little).
- Now, put the cookie tray/plate in the preheated steamer/pan & let it bake for 15-20 minutes. After 15 minutes, you can open the steamer/pan & check if your cookies have baked.
- Now, when ready, turn off the flame & let it sit in the steamer/pan itself for more 2-5 minutes.
- Now, takeout the cookie tray/plate, let all the cookies cool down completely & then store it in an air-tight container. (Don't worry if your Cookies are soft cause Cookies only turn crispier after cooling down)
