Layered Sandwich Dhokla

What you'll need:

 For White Layer -

  1. Semolina (Rava/Suji) - 1 cup (Tip: You'll need fine Semolina for this recipe. If now available, take thick Semolina, churn it in a mixer & then use it)
  2. Curd - ½ cup
  3. Oil - 2 tsp
  4. Eno - 2 tsp
  5. Water - As per requirement
  6. Salt - As per taste

 For Orange Layer - 

  1. Garlic flakes - 8 to 10
  2. Kashmiri Red Chilli Powder - 1 tbsp
  3. Salt - 1 tsp
  4. Water - 2 tbsp
  5. Eno - 1 tsp
  6. Oil - 1 tsp

 For Tempering (Vaghar) - 

  1. Oil - 2 tbsp
  2. Mustard Seeds (Rai) - 1 tsp
  3. Sesame Seeds - 1 tsp
  4. Asafoetida (Hing) - 1/4 tsp
  5. Curry Leaves - 8 to 10

 For Garnishing - 

  1. Coriander Leaves

How to make?

  • Firstly, prepare White Layer by adding Semolina, Curd & Salt in a bowl & mix well. Then, keep on adding the water slowly while mixing the ingredients well till it forms medium thick batter. (Tip: If the mixture becomes too liquid, then add little Semolina to make it thick. If it becomes more thick, then add little water to make it a bit liquid.) Now, cover this batter with a lid & keep it aside for rest for 15 minutes.
  • Now, prepare Orange Layer with the above mentioned ingredients except Eno & Oil by churning them into a mixer to form a thick paste/chutney.
  • Now, divide the batter prepared for white layer into 3 equal portions. 
  • In 1 of the portions, add orange paste/chutney prepared above to give it a good orange colour. 
  • Now, add 1 tsp Oil in each of the 3 divided batter portions (1 tsp Oil separately in each portion, in all you'll need 3 tsp Oil). 
  • Now, in an Idli steamer or a pan, put 2 glasses of water & in the centre of the vessel, place a wired rack. In case you don't have a wired rack, you can keep an inverted steel bowl of 1 inch height. Cover the vessel with a lid & let the water boil on high flame. (Refer the picture) 
  • Now, grease cake tin or any vessel with a flat base of more than 4 inch height.
  • Now, add 1 tsp Eno & 1 tsp Water in one of the white portions & mix slowly 8 to 10 times. (Tip: Do not mix it more, otherwise the effect of Eno will go away.) Now, put this white batter in the greased vessel & put this vessel in the steamer or a pan & cook for 5 minutes on high flame with the lid on.
  • Meanwhile, add 1 tsp Eno & 1 tsp Water in the orange layer & mix slowly for 8 to 10 times. DO NOT OVER MIX. Now, pour this orange layer over the cooked white layer in the steamer & cover it with a lid & let it cook for another 5 minutes.
  • Now, put 1 tsp Eno & 1 tsp Water in the remaining white portion & mix slowly for 8 to 10 times. Now, put this white batter over the cooked orange layer in the stream, cover it with a lid & again cook for 5 minutes.
  • After the last white layer has been cooked for 5 minutes, you can insert a knife or a toothpick to check whether the batter has been cooked completely or not. If the knife or a toothpick comes out clean, it means your batter has been cooked. Then, put off the flame & remove the vessel from the steamer & let it cool completely. 
  • Now, remove the Dhokla from the vessel in a plate & keep aside. 
  • Now, prepare the tempering by using the above mentioned ingredients. Pour the tempering over the Dhokla & spread it evenly.
  • Now, slice the Dhokla into pieces as shown in the video below.
  • Finally, garnish all the pieces with Coriander Leaves & your tasty Layered Sandwich Dhokla is ready to be served.


NOTE: While reading this recipe, you might feel it is too lengthy but trust me, it takes only 15-20 minutes to get ready & tastes very good too. So, definitely try out this recipe. It will totally be worth it.
