Double Decker Coconut Barfi (Raksha Bandhan Special)
What you'll need:- Desiccated Coconut - 3 cups
- Milk - 1 cup (Tip: If Milk is not available, use 1 cup Water and 4 tbsp Milk Powder)
- Sugar - 1 + 1/4 cup
- Milk Cream - 3 tbsp
- Food Colour - As per choice (Preferably yellow colour)
How to make?- In a pan, put milk & add half of the sugar & boil till it thickens.
- In another pan, put desiccated coconut & keep the flame low. Stir for 2 minutes. Now, add remaining sugar & stir for another 2 minutes.
- Now, add milk & sugar mixture in the desiccated coconut pan and cook till all the ingredients blend properly.
- Now, add milk cream & stir continuously for 2 minutes. (Tip: If milk cream is not available, you can use 2 tbsp Pure Ghee)
- Now, grease a tray & put half of the ready white Barfi mixture in it & spread the mixture evenly & flatten it from above using a spatula.
- Now, in remaining half mixture, put yellow food colour & mix properly.
- Then, put the yellow mixture over the white one in a greased tray & spread it evenly & flatten it too.
- Keep the ready Double Decker Coconut Barfi to set for 10 minutes & then cut it in small square pieces.
- You can garnish your Double Decker Coconut Barfi with a Silver Leaf (Varak) if it is available with you.
Shelf Life: You can store Double Decker Coconut Barfi for 7-10 days. If you refrigerate it, you can store it for 10-12 days.
